iBackup is a great Mac solution for backing up files to an external hard drive, or to Dropbox. Used in conjunction with Time Machine, it offers complete peice of mind.

Synctoy is free backup software for windows.
You can setup folder pairs to copy the contents of on folder to another.
An example would be to setup your 'My Documents' folder, and copy it to a folder on an external drive.
Not only do I use it to copy important files to my DropBox folder, I use the windows scheduler to automatically run the software and copy all folder pairs at midnight.
Use this path as a guide to run All folder pairs in scheduler.

MacSpeech International is fantastic dictation software for the Mac.
I created this post by simply speaking into a USB microphone, and watching the text appear on screen.
It requires 30 minutes set up time, as the software needs to be trained to recognise your voice.
It also requires you to speak in a manner that software computer can understand.
My daughter Arden thinks it is fantastic, so much so that she uses it to chat via MSN messenger.
The software also enables you to open and and quit applications, and also manipulate application's features via voice command.
HandBrake is a great application for converting videos or DVD's into whatever format you require.
I use Handbrake primarily for backing up my DVD's into MP4 format, so I can play them on my Macbook, AppleTV, or iPhone. I also use it to convert .avi or .wmv files that I come accross from time to time.
